Sugar - 150g
Fresh cream - 150g
Water - 2Tbs
Butter - 1Tbs
Miso - 1Tbs
1) Add sugar and water in a pan and cook over medium heat until sugar starts bubbling and caramelizing (turning brown). Don't mix with spatula.
2) Warm fresh cream in a pan and add to the caramel in three batches. Be careful not to burn yourself with the splashes!
3) Mix well and add miso, then butter and turn heat off.
