White tamari is light-coloured “soy-free” tamari made from Australian Organic Pearl Barley, Filtered Water and BFA Certified Sea Salt. It is a salty fermented seasoning with a unique koji derived umami and sweetness and can be used as substitute for salt or soy sauce. Unlike soy sauce which gets its dark colour from fermented soybeans, Shiro (White) Tamari is light in colour and does not stain your dishes while adding complex and rich umami. It does wonders in soups (especially clear soups like dashi and consommé), lifts up the flavour of vegetables and mushrooms, and matches perfectly with white-fleshed sashimi. When used in marinades, the enzymes in the tamari tenderizes meat and fish and brings out the flavour of the ingredients.
