Shio Koji Chicken

Marinate chicken thigh with Shio Koji (see recipe at  https://www.riceculture.com.au/blogs/recipes).

②Let it rest from 1/2 day to 2 days in fridge (while the enzymes in Shio Koji breaks down the protein into amino acids, tenderizing the meat and bringing out flavour. Yum!!)

Grill chicken in oven (or on frying pan).
