Shio Koji Chicken
①Marinate chicken thigh with Shio Koji (see recipe at https://www.riceculture.com.au/blogs/recipes).
②Let it rest from 1/2 day to 2 days in fridge (while the enzymes in Shio Koji breaks down the protein into amino acids, tenderizing the meat and bringing out flavour. Yum!!)
③Grill chicken in oven (or on frying pan).
